Southwestern Breakfast Sweet Potatoes

Spice up your breakfast with these Whole30 complaint sweet potatoes! The perfect compliment to your eggs and bacon.

  • 3-4 sweet potatoes peeled and cut into 1/2 inch cubes
  • Olive oil
  • 1 tsp sea salt
  • 1 tsp cayenne pepper
  • 2 tbsp chili powder


  1. Preheat oven to 425F

  2. Spread cubed sweet potatoes out onto a baking sheet (I usually cover mine with aluminum foil so the potatoes don’t stick)

  3. Drizzle sweet potatoes with olive oil and spread around until cubes are evenly coated

  4. Season with sea salt, cayenne pepper, and chili powder

Recipe Notes

Toaster oven version: You can half this recipe and cook up 1-2 sweet potatoes in the toaster oven.
Breakfast bowl: serve with hardboiled egg and compliant sausage link
Loaded taco bowl: serve with seasoned ground beef, pico de gallo, and fresh guacamole
