Preheat oven to 425F
Spread cubed sweet potatoes out onto a baking sheet (I usually cover mine with aluminum foil so the potatoes don’t stick)
Drizzle sweet potatoes with olive oil and spread around until cubes are evenly coated
Season with sea salt, cayenne pepper, and chili powder
Toaster oven version: You can half this recipe and cook up 1-2 sweet potatoes in the toaster oven.
Breakfast bowl: serve with hardboiled egg and compliant sausage link
Loaded taco bowl: serve with seasoned ground beef, pico de gallo, and fresh guacamole
